Peppercorn Beef Rub
There is something almost magical about the way that pepper makes such a great rub with an excellent cut of beef. We especially like this rub on cuts of steak like the boneless blade, tri tip and flat iron but it also works wonders on roast beef and prime rib.
Now when looking for a great beef rub it is really all about preference - there are many steak lovers and even top restaurant chefs who don't like to use salt in their steak seasonings because they feel the salt keeps the meat from browning and of course browning is an important element of a spectacularly grilled steak. Some also believe that salt dries out beef where some believe it "brings out" the best of other flavors.
Because of this we offer a wide range of beef and steak seasonings and this is one that is a salt free version. Now we also know that many steak lovers crave spicy flavor with their steaks and this one will not disappoint as it packs a good deal of peppery flavor.
We also tested using more of a cracked pepper than a ground and while we liked the texture of the cracked pepper we found that we lost too much of it during the flipping of the steak in the cooking process. We also found that the flavor explosions of biting into a cracked peppercorn sometimes overpowered the balance of the other seasonings. So for these reasons we went with more of a finer ground seasoning.
Hand blended from domestic paprika, lemon zest, garlic powder, cayenne pepper, onion powder, Mexican oregano, black peppercorns, white peppercorns, green peppercorns, and pink peppercorns.
