Kala Namak - Indian Black Salt is harvested from a unique mineral formation located in the foothills of the Himalayan mountains of the Indian sub-continent. When powdered, the salt takes on a pinkish hue.
The mineral formation is called "Greigite". It is Sodium Chloride (salt) with a significant amount of iron sulfite bonded together.
The flavor of Kala Namak cannot be ignored. It has a strong flavor, very reminiscent of eggs. (It's the sulpher.) This is a great salt for many uses. In small doses, it will enhance the sugars in fruits and vegetables. It is the imperative ingredient when making Indian Lemonade with Chaat Masala.
In vegan diets, or for those who are allergic to eggs, it is a magnificent way to fool the palate into believing that eggs were used.
