Chili Powder, Medium


This medium chili powder uses GUAJILLO chile to impart a smooth and dexterious flavor of the high plains upper Mexico region.  Best used with beef and pork, it is equally smooth in flavoring poultry, vegetable, and delicate fish dishes.


Use 1TBSP per pound to start, more as needed.  To add more heat, add a bit of cayenne powder.  To reduce heat, add some brown sugar.
