Ceylon Cinnamon, or Cinnamomum Verum is true cinnamon. It is native to Ceylon, now Sri Lanka. Of all the cinnamon variants, it contains the highest concentration of Cinnemaldehyde, the essential oil that gives cinnamon it's distinctive aroma and flavor.
Ceylon cinnamon has a distinctive 'heat' flavor. It is the variant most used in infusions where a bit of heat is needed such as Red Hot candies or liquors. Chile dishes that call for cinnamon benefit greatly from this variant.
